Chubby pancakes, american style, to start Sunday with nice vibes.
I adapted one of Patricia's recipes.
1 1/3 cups all purpose flour
1 teaspoon baking powder (next time I'll add a bit more)
1/4 teaspoon salt
1 1/2 tablespoon sugar
2 egg yolks
2 egg whites (in soft peaks)
1 cup water
2 egg yolks
2 egg whites (in soft peaks)
1 cup water
I sifted the dry ingredients, and then added the humid ones (except for the egg whites) stirring well.
I beat the whites until they formed a foam, because at the time I woke up I wasn't in the mood to beat the whites for hooours so they would form peaks.
I set the batter aside, and meanwhile I peeled/ seeded/ chopped three large apples.
I cooked them with 100ml water + 1 cinnamon stick broke into pieces, and 1/4 teaspoon salt.
While the apples cooked, I fried the pancakes.
There is no secret: fry until one side turns golden brown, flip and fry the other side.
It yielded 6 pancakes.
When the apples where soft, I've left only the liquid in the pan, so it would become thicker.
Then I processed it in the blender with 2 tablespoons cooked apples.
I assembled them like this:
pancake - apples - pancake - apples - apple syrup.
And I swear, two pancakes for each one left us satisfied for about 2 hours.
Delicious! :)
