Granola with dried cranberries + iced hibiscus tea.





2 cups rolled oats
1/4 teaspoon salt
1/2 teaspoon powdered cinnamon
1/4 teaspoon powdered ginger
4 generous tablespoons honey
3 tablespoons sunflower oil
1/2 teaspoon vanilla essence
1/4 cup flaxseeds
1/4 cup sunflower seeds
1/4 cup chopped pecans
4 tablespoons grated unsweetened dried coconut
1/2 cup chopped dried cranberries


First thing I did was to mix well in a bowl the oats/ salt/ cinnamon/ ginger.
Next I mixed in a small bowl the honey/ oil/ vanilla.
I added the wet ingredients to the dry ones and stirred until all of the oats were coated.
I baked it for 20 minutes (I was distracted with life) at 160oC in pre-heated oven, stirred
with a spoon, and baked for 10 minutes more).
I stirred again, added the flaxseeds/ sunflower seeds/ pecans, left it in the oven for
another 10 minutes and then took it out for good.
I sprinkled the cranberries and the coconut, waited for it to cool completely, and stored in lided jars.


The tea was made overnight:
I left the dried hibiscus flowers in a lided jar with water in the frigde to make a strong tea,
and in the morning I added more cold water, straining before serving.


A nice start for my morning!
