March 1st was  for me a day to celebrate new and old things, both very important.


I worked hard, had a delicious dinner at an Italian restaurant, and today is a day to tidy up the house.
So here goes a simple lunch, which stays in the oven while I organize things around my place.


Vegetables pie (adapted from here)

1/2 butternut squash
1/2 sweet potato
1 small zucchini
1 carrot
1 beet
1 small onion
4 eggs
150g white fresh cheese
Olive oil, as needed
Salt, black pepper, and nutmeg, as needed

I peeled and sliced thinly all of the vegetables, and spread them in a baking sheet,
covering them with a little olive oil.
I baked it in pre-heated oven at 180oC for 30 minutes, until tender.
Then I processed the eggs and cheese in the blender, seasoning with
1/2 teaspoon salt, 1/2 teaspoon black pepper, and a pinch of grated nutmeg.
I put the vegetables in a baking tray, in layers, e poured over the egg mixture,
poking with a knife to make sure there would be no air bubbles.
I baked for 50 minutes and let cool inside the oven for 10 minutes before taking
it out (to avoid mess with my glass baking tray, which wasn't 100% oven safe).
I let it cool 10 more minutes before removing the pie from the mold,
the I ate it.
